Who doesn't love berries!? I think they are really the best part of summer. Berries with cream or whipped cream is just the absolute best desert. This recipe is super easy; I made it for the 4th of July, because there really is nothing more American than covering berries in cream and sugar!
- 1 box of butter yellow cake mix, prepared according to directions, baked, and cut into squares
- about 3 cups of frozen or fresh berries (I used a raspberry, blackberry, and blueberry mix)
- 1 tablespoon or so of brown sugar
- about 1 teaspoon of lemon juice
- 1 small carton of whipping cream OR 1 tub of prepared whipped cream
- about 2 tablespoons of strawberry jam
- 1 teaspoon of vanilla
Really, you should start by baking your cake, letting it cool, and cutting it into pieces. I only use about half of a cake at a time; I freeze the rest of the pieces for another trifle!
Start by preparing your whipped cream. I whipped some up fresh. In an electric mixer, whisk together your whipping cream and strawberry jam and vanilla. Start mixing low, since it will splatter. As it gets thicker, increase the speed until you're on the highest setting. Your whipped cream is ready right when it loses it's shine. If you keep beating it, it will start turning into butter.
For those without electric mixers, you can stir up a tub of whipped cream with strawberry jam and vanilla.
Now, prepare the berries.
In a small pan over medium heat, add your berries and brown sugar. Stir until the berries start to thaw and then, add your lemon juice. Continue heating until the berries are all thawed and have let out a bit of juice.
Remove from heat and allow to cool for a few minutes.
Now, to layer!
Start with a bit of cake even on the bottom of a large bowl. (Mine is from Ikea!)
Add about 1/3 of the berries!
Cover with whipped cream! And then, repeat the layers.
Cover with plastic wrap and let chill in the fridge until you're ready to serve!
